Sophisticated Culinary: Aleppo Beans Salad

I found these cans of beans at Kalustians in my neighborhood, and couldn’t resist the temptation of trying a different kind of beans. These are very large, and they make a delicious salad.

Ingredients:

broad fava beans in brine, 2 14 oz cans

onion, 1/2, chopped

garlic, 1 clove, chopped

table salt, 1 tbsp

carrot, 1, grated

grape seed oil, 2 tbsp

white wine vinegar, 2 tbps

scallion, 2, chopped

parsley, 1/2 cup, chopped

cherry tomatoes, 1 cup, cut in half

 

HOW TO MAKE IT:

Rinse the beans well in running, cold water. Place all ingredients in a big bowl and mix well. Let the salad rest for 20 minutes before serving. Serve at room temperature or cold.

Yields: 4 servings
