How to Make Mexican’s Famous Guacamole

To make an excellent guacamole, we certainly need good, fresh produce. By the way, we used a combination of parsley, dill and chives for herbs in this recipe, which turned out great.
INGREDIENTS
1/2 red onion, finely chopped
1 jalapeno, minced
1 serrano pepper, minced
3 small avocados, chopped
1 large tomato, chopped
3 Tbsp parsley or cilantro, finely chopped
1 Tbsp kosher salt
1 Tbsp lime juice
HOW TO MAKE IT
Mince 1/3 of the chopped onion with the peppers. Combine paste with all remaining ingredients in a bowl, stirring gently. Serve.
Chop 1/2 red onion finely.
Mince a serrano pepper and a jalapeno, discarding most of their seeds.
Mince the peppers.
Mash the onion and peppers with salt in a mortar and pestle.

Chop parsley finely.
Chop the herb(s) finely.
Cut a large tomato.
Squeeze the seeds and juice from the tomato and chop it finely.
Cut the avocados in half lengthwise, remove the pit. Using a pairing knife, make a grade and remove the flesh with a spoon.
Use the juice of 1/2 a lime.
Combine all ingredients by stirring gently.
